Honey is a natural sweet substance produced by honey bees from the nectar of blossom or from secretion of living parts of plants or insects. Due to its nutritional and medicinal value analysis of physicochemical properties of honey is of great importance not only for quality control but also as indicator for environmental polloution. This study aimed to determine the physicochemical properties of honey.. three honey samples collected from Juba, Bahri (Industrial Area) and Um Altoyour were analysed. The mean values of density, viscosity, specific gravity, electrical conductivity, refractive index, pH, water content, iodine value, and peroxide value were 1.33 g\cm3, 52 poise, 1.36, 0.163 mScm-1 , 1.489, 3.89, 17.7%, 1.22 g\100g, 0.0 meq\kg. the concentrations of heavy metals lead, copper, iron and zinc were determined by atomic absorption and inductively coupled plasma spectroscopy tehniques. The mean values of lead, copper, iron and zinc were (4.5 ppm), (2.213 ppm), (44.298 ppm) and (1.201 ppm) respectively by atomic absorption spectroscopy. The mean value of lead, copper and iron were (6.88ppm), (3.3094ppm), (54.71ppm) respectively by inductively coupled plasma. The results obtained by inductively coupled plasma were usually higher than those obtained by atomic absorption spectroscopy because the first is more sensitive. honey produced in Juba had good physicochemical properties while the others exceeded the boundaries of lead and water content. Therefore the study recommend that doing more studies about honey and the effect of aging and environment on the properties of honey.
