Nutritonal Evaluation Of Traditionally Processed Pearl Millet ( Pennisetum Glaucum L.) Cultivars

الملخص

Chemical composition, antinutritional factors content and in vitro protein digestibility and minerals availability of raw, processed (soaking, coarsely grinding, autoclaving, germination, debranning) and fermented samples of two pearl millet cultivars (Gazira and Gadarif) were studied. The investigation showed that pearl millet cultivars contained 5.4 – 6.48% moisture, 11.4 – 14.4% crude protein, 1.42 – 2.2% crude fiber, 6.53 – 6.67% fat, 1.58 – 1.75% ash and 73.67 – 68.55% carbohydrate. Results obtained for antinutrients factors were 987.19 - 952.51 mg/100g for phytic acid, 415.38 - 420.25 mg/100 for polyphenol and 0.22 - 0.17% for tannin. Protein digestibility was ranged from 63.20 to 66.00%. Minerals availability (%) data was 54.47 – 56.31, 27.67-41.32, 22.16-25.92 and 34.88-33.04 for Ca, P, Fe and Zn, respectively. Most processing treatments followed by fermentation for 12 and 24 hrs lowered phytic acid, polyphenol, and tannins contents. Among the treatments, autoclaving and germination followed by fermentation (24 hrs) could bring about maximum decrease in phytic acid content (2.35 mg/100g), while autoclaving and debranning followed by fermentation (12, 24 hrs) significantly reduced tannin content to 0.04 and 0.07% for the two cultivars, respectively. Although most processing treatments lowered antinutrients, germination was observed to increase tannin content. In vitro protein digestibility and minerals extractability of the two cultivars were significantly improved as a result of processing treatments except the coarsely ground seeds which were markedly decreased protein and minerals extractability. Fermentation of raw and processed samples for 12 and 24 hrs significantly increased the protein digestibility and minerals extractability even after fermentation of coarse ground.
