الملخص

Le présent travail a porté sur les analyses physicochimiques et microbiologiques de deux types de jus «IFRUIT», le jus de fruits et le jus de fruits lacté, commercialisés au niveau de la wilayad’Ain Témouchent (Algérie).Les analyses physico-chimiques (pH, acidité et le degré de Brix), ainsi que les analyses microbiologiques, qui ont recherché et dénombré la flore aérobie mésophile totale, les coliformes totaux et fécaux, staphylococcus aureuset salmonella ainsi que les levures et les moisissures, indiquent que les deux types de jus répondent aux normes de la réglementation Algérienne en vigueur
