الملخص

Camel products were known for their long shelf life. This work was conducted to evaluate the chemical composition, meat quality, microbial load and antimicrobial properties of camel meat and beef. Sixteen samples of camel meat and the same for beef were collected immediately after slaughtering from four slaughter-houses in Khartoum State. Composite samples were obtained from 16 mature camels (Kabashi breed) and 16 mature bulls (Baggara breed) about 4 to 5 years of age. The samples were collected in sterile screw-cap bottles and brought to the laboratory in an ice box. Fifty strains of lactic acid bacteria (LAB) were isolated from the different meat samples. Purification and preservation of LAB isolates, characterization and identification of isolates were done using their phenotypic characteristics, growth characteristics of LAB colonies, oxidase test, catalase activities, gram staining and morphological examination, growth in 6.5% and 18 % NaCl, growth at pH 9.6 and production of acid or gas (CO2) from glucose. Antimicrobial activity of the culture supernatant was determined by the agar well diffusion method against 5 pathogenic microorganisms including gram-positive Bacillus subtillus and S. aureus and gram-negative E. coli, Sallmonella typhie, and Salmonella typhie 11. Results showed a significant difference (P<0.01) in moisture (73.3%, 70.9 %) and fat content (6.20%, 2.53%) between the beef and camel meat, respectively. The water holding capacity differed significantly (P<0.05) between the two types of meat, beef had higher water holding capacity. Tenderness was similar in camel meat and beef. Colour in camel meat was lower than beef. Camel meat had lower juiciness than beef. Flavour was similar in camel meat and beef. There was a significant difference (P<0.05) in bacterial load (4.7x105 vs 1.3x105) cfu/gm for beef and camel meat, respectively. The selected isolates were gram positive, catalase negative, non endospore forming, and produce acid from glucose. Were probably lactic acid bacteria. 25 were Enterococci, 17 were lactobacilli and 8 were Pediococci. 34 LAB isolated from camel meat and 16 isolated from beef. Thirty three isolates produced antimicrobial substance against S. aureus, 25 isolates were active against both S. aureus and E. coli. Nineteen isolates (15 from camel meat and 4 from beef) were characterized as bacteriocin-like compounds. It was recommended that LAB isolates producing bacteriocin can be used as meat preservatives. Bacteriocin compounds can be used as natural preservatives specifically for meat and meat products.

تمتاز منتجات الإبل بطول مدة صلاحيتها. أجريت هذه الدراسة لتقييم التركيب الكيميائي والصفات النوعية والحمل الميكروبي بالإضافة إلى المركبات المضادة للميكروبات في كل من لحوم الإبل ولحوم البقر. أخذت عينات مختلطة من ذبائح 16جمل كباشي ناضج ومثلها من ذبائح 16ثور بقاري ناضج مباشرة بعد الذبح والتجهيز من 4مسالخ بولاية الخرطوم. جمعت هذه العينات وضعت في زجاجات معقمة ووضعت في حافظة ثلج في درجة حرارة منخفضة حتى إيصالها إلى المعمل. تم عزل 50نوع من بكتريا حامض اللاكتيك من عينات اللحم المختلفة. تم تنقية وحفظ وتوصيف وتعريف أنواع البكتريا المعزولة على أساس الصفات الظاهرية و خصائص النمو واختبارات الاوكسديز و الكتاليز و صبةة جرام و نمو البكتريا في محلول كلوريد الصوديوم بتركيز 5.6%و 18%و النمو في أس هيدروجيني 9.6و إنتاج غاز ثاني اوكسيد الكربون من الجلكوز.. تم اختبار قوة فعالية مستخلص البكتريا المعزولة ضدخمسةمنالميكروباتالممرضة والتي تشمل أنواع من البكتريا موجبةالجرام Bacillus subtillusو S. aureusوأخرى سالبة الجرام E. coliو Sallmonella typhieو Salmonella typhie 11.أوضحت الدراسةوجود فرق معنوي (P<0.01)بين نوعي اللحم في محتوى الرطوبة (73.3مقابل 70.9%) ومحتويالدهون(6.20مقابل 2.53%) بين لحم البقر والإبل على التوالي. كما أن هناك فرقمعنوي (P<0.05)في قابلية حمل الماءبين نوعي اللحم قابلية لحم البقر كانت أعلى. درجة الطراوة كانت متقاربة بين نوعي اللحم, حيث كانت في لحم الإبل (62) ) وفي لحم البقر (65) درجة. درجة اللون في لحم الإبل (65) كانت أقل مما وجد في لحم البقر (71). لحم الإبل كان أقل عصيرية (67) من لحم البقر (77) ) بينما النكهةكانت متقاربة بينهما (74) درجةفي لحم الإبل و (73) درجة في لحم البقر. أوضحت هذه الدراسة وجود فرق معنوي(P<0.05)بين نوعي اللحم في الحمل الميكروبي (105×4.7مقابل 105×1.3)مستعمرة/ جرام للحوم البقر والإبل على التوالي. أوضحت النتائج أن البكتريا المعزولة موجبة الجرام. سالبة في اختبار الكتاليز, وتنتج حامض من الجلكوز, إذن فان تصنيفها هو بكتريا حامض اللاكتيك. 25عزلة صنفت على أنها Enterococciو17صنفت على أنها Lactobacilliو8صنفت على أنهاعلى أنهاPediococci .هناك (34) من بكتريا حامض اللاكتيك تم عزلها من لحم الإبل و16عزلت من لحم البقر. 33عزلة من حامض اللاكتيك وجد أنها نشطة ضد بكتريا S.aureusبينما 25نشطة ضد S. aureusو E. coliمعا ً .تسعة عشر عزلة من حامض اللاكتيك (15من لحوم الإبل و 4من لحوم البقر) صنفت على أنها بكتريوسين. بكتريا حامض اللاكتيك التي تنتج البكتريوسين يمكن استعمالها كمادة حافظة للحوم ومنتجاتها.
