- The wide range of cheeses today can be categorized by the country of origin, the manufacturing process or the end-use property. Bouhezza cheese occupies a very important socio-economic place established in the rural and peri-urban environment. It is a traditional cheese from the eastern region of Algeria made from different types of milk (goat, sheep and cow), matured in a goat or sheep skin bag called « Chekoua»or « Djeld de Bouhezza» treated mainly with salt and juniper where spontaneous fermentation of milk occurs, “lben”. Lbenis obtained by churning and partial skimming of spontaneously fermented milk after the production of butter. The cheese is usually ripened in the skin bags for one or two months. The final cheese making process is characterized by the addition of whole raw milk, which corrects the cheese’s salinity and acidity. Before consumption, the cheese is generally spiced with red pepper. Rheology is the branch that aims to measure the properties of materials that control their deformation and flow behaviour when subjected to external forces. Each cheese, at a given moment in its maturing process, constitutes a rheological entity and many parameters are likely to modify its behavior
