Camel milk contains natural antioxidant substances (vitamins and enzymes)within it, rich in antibacterial molecules (lysozymes, lactoferrin and etc.). Studies have thus reported that even camel proteins and / or their hydrolysates can exhibit antioxidant and antibacterial activity. As part of this work we were interested invacuating in vitro the antioxidant and antibacterial activity of camel caseins beforehand after enzymatic hydrolyses while mimicking in vivo conditions. In the same on text, we seek to know the capacity of each digestive enzyme used to produce an antioxidant and antibacterial effect of its own, it is the specificity of each that allows itto decipher the encoding contained in the protein sequence in order to release bioactive peptides. In this study 11 samples of camel milk were collected. Physicochemical analyzes have shown that the pH value is 6.42 ± 0.13, the Acidification is 17.72 ° D ± 2.10 and the specific gravity is 1.0252 ± 0.0026, of on the other hand, the protein assay carried out on the different protein fractions (total proteins, whey proteins and caseins) showed that this milk is rich in caseins with a rate of 24.03 g / l ± 1.27). Subsequently, the caseins were separated from the rest of the milk, washed and then lyophilized. A portion of these was hydrolyzed by digestive enzymes (pepsin and pancreatic) and the other was left intact. Thus, four fractions were prepared: total native caseins (CNT), pepsinhydrolyzate of caseins (H-PEP),pancreatic hydrolyzate of caseins (HE PEN) and pepsin/ pancreatic hydrolyzate (H-PEP / HE PEN). These factions have been used to assess their antioxidant and antimicrobial activities. The FRAP test showed that compared to native caseins, the hydrolysates exert a greater reducing power with 20 mg / ml concentration, OD: 700 nm, the absorbances recorded: 0.104 for CNT, 0.134 for H-PEP, 0.231 for HE PEN and 0.280 for H-PEP / HE PEN. The investigation carried out on the results found by several authors concerning antimicrobial activity, before and after hydrolysis by digestive enzymes against bacterial strains (Gram + and -) showed that the antibacterial effect is almost absent in intact caseins but it seems, once these proteins are hydrolyzed and with different nuances between each enzyme and the other. This suggests that antibacterial peptide fragments derived from camel caseins have been released. Digestive enzymes have a key role in producing the biological effect, and each has its own ability toproduce this effect.
