الملخص

Notre travail s'inscrit dans le cadre de l'étude des activités biologiques, et de lacomposition chimique des plantes aromatiques et médicinales, afin de déterminer les indicesphysico-chimiques et d'évaluer les activités antimicrobiennes et antioxydantes de l'huileessentielle des plantes aromatiques Rosmarinus officinalis L et Ocimum basilicum L de larégion de Ghardaia.Ces huiles essentielles extraites par hydrodistillation. Le rendement d‟extractionobtenu est de 0.47% pour le basilic et 0.83% pour le romarin, L'analyse par chromatographieen phase gazeuse couplée à la spectrométrie de masse a permis d'identifier 68 constituantspour les HEs de basilic où le composé majoritaire dans cette huile essentielle est le Linalool et47 constituants pour les HEs de romarin avec 16,85 % de Bornéol.La capacité de nos huiles essentielles à inhiber les micro-organismes a été testée sursix souches bactériennes. Les deux plantes ont montré un large spectre d'action sur lesbactéries testées. A noter que le pouvoir antibactérien de l'HEs d'Ocimum basilicum L s'estrévélé supérieur à celui de Rosmarinus officinalis L. Et le potentiel piégeur de l'huileessentielle de basilic était supérieur à celui de l'huile essentielle de romarin, les valeurs IC50sont respectivement égales à 1,4154mg/ml et 9,4750mg/ml.Enfin, en raison de l'importance des huiles essentielles et de la possibilité de leurévaporation, nous avons testé le procédé d'encapsulation par la méthode de gélificationinverse sur notre huile essentielle afin de la stabiliser et de la protéger (contre la lumière,l'oxygène et la température)...Our work is part of the study of the biological activities, and the chemicalcomposition of aromatic and medicinal plants, in order to determine the physico-chemicalindices and to evaluate the antimicrobial and antioxidant activities of the essential oil ofaromatic plant Rosmarinus officinalis L and Ocimum basilicum L from the Ghardaia region.The extraction yield of these essential oils by hydrodistillation is 0.47% for basil and0.83% for rosemary. Notethat the antibacterial power of the essential oil of Ocimum basilicum L proved to be greaterthan that of Rosmarinus officinalis L. And the scavenging potential of basil essential oil wassuperior to rosemary essential oil, the IC50 values are equal to 1.4154mg/ml and9.4750mg/ml respectively.Finally, because of the importance of essential oils and the possibility of theirevaporation, we tested the encapsulation process by the reverse gelation method on ouressential oil in order to stabilize it and protect it (against light , oxygen and temperature).
