- n light of the considerableeffect that plants have on health, the proposed innovative research theme offers a solution to the problem of intestinal health through the development of selective natural strategies to improve the physiological activities of beneficial germs withprobiotic interest, such as lactic acid bacteria. We have in the logic that the enrichment of lactic acid bacteria cultures with plant extracts, in the case of polyphenolic extracts, could allow these microorganisms to guarantee their viability during the passage through the gastrointestinal tract and to acquire characteristics recommended for a good probiotic physiological activity. We were interested in evaluating the prebiotic effect of the extract from fenugreek on the growth, adhesion and total biofilm formation of two lactic acid bacteria with probiotic interest. The extractionoccurred by water as solvent was better, it allows obtainingthe best extraction efficiencyand the highest content of polyphenols and flavonoids (910.957 mg EAG / ml extract and225.868mg EQ/ml extractrespectively). This extract showed significant prebiotic activity (on bacterial growth, adhesion and total biofilm) at concentrations of 0.8and 0.09respectively for Streptococcus thermophilus and Enterococcus durans. The results generated suggest that this innovative strategy may have an impact on improving the value of probiotics and their propension to organize themselves into biofilm and thus colonize the epithelial surface.
