All the experiments of the research were conducted at the Industrial Research and consultancy centre, Khartoum north.The objective of this research was to investigate the effects of the processing variables, which include the particle size, initial moisture content of the kernels, heating temperature and heating time, on the quantity and quality of the expressed Balanites oil.It was found that size reduction led to a decrease in the oil yield and consequently an increase in the free fatty acid value of the oil which raises the acidity of the oil. Also increasing the initial moisture content beyond 7.55% (wet basis) decreased the oil yield sharply. Increasing both heating temperature and heating time increased oil yield. The maximum oil yield was obtained when the samples were heated at 125°C for 25 minutes beyond which the oil decreased. Also it was found that, very high temperature and prolonged heating led to an increase in the free fatty acids and the peroxide value of the oil. It was recognized that the different processing variables did not affect the physical propeliies of the oil.
