Bee pollen is considered as dietary supplement that has been widely used for its therapeutic properties. This work presents the different components of pollen (proteins, lipids, water, carbohydrates, vitamins...) and their beneficial effects on health such as anti-inflammatory and antioxidant action... as well as the technique and conditions of its harvest. It also presented the different factors that alter the nutritional and microbiological quality of bee pollen (humidity, micro-organisms, pesticides...) and the different criteria that define this quality. As well as the different cleaning steps (traditional or industrial), which allow the elimination of impurities (harmful insects, dust, leaves, damaged pollen balls...). We have also discussed pollen conservation methods such as freezing, vacuum and modified atmosphere packaging, pollen extracts and traditional and industrial drying. In particular, some drying techniques (drying in racks, freeze-drying, controlled instantaneous expansion...) that can be used for pollen have been proposed, as well as their advantages and disadvantages. To finalize this process, the conditions under which the conditioning and storage of bee pollen are carried out were mentioned and a guide of good beekeeping practices was proposed which can help pollen producers to improve their production in terms of quality and quantity. At the end of this thesis, we briefly discussed the consumption and marketing of bee pollen worldwide, and also the situation of beekeeping in Algeria and the factors that limit the local production of bee pollen
