Our work focused on several genera of lactic acid bacteria, three pathogenicbacteria and a strain of Candida albicans. These lactic acid bacteria have been testedagainst each other and against pathogenic strainsLeuconostoc inhibits each other in 85% of cases and inhibited pathogenic bacteriain 91% of cases. Candidaalbicans was not inhibited by any strain of Leuconostoc. Severalinhibitions were observed on MRS medium, but none on Mayeux medium.that observed by The sensitivity of pathogenic strains to antibiotics is of the sameorder as inhibitions due to lactic acid bacteria.Leuconostocs have a greater inhibitory power on pathogenic bacteria compared tolactococcus and enterococci. These last two genera showed an inhibitory effect onlyagainst E.coli and Staphylococcus aureuThe well diffusion method made it possible to observe inhibitions againstlactococci and pathogenic bacteria caused by leuconostocs and enterococci. Theleuconostocs, enterococci and lactococci tested against each other did not show anyinhibitory effect.The results of the inhibitory effects existing between lactic acid bacteria make itpossible to consider the combination of leuconostoc and lactococcus strains for thedevelopment of mixed ferments.
