The HACCP Quality management in particular the risk analysis and critical points control system is a preventive system used on a global scale which aims to ensure food safety in an economic enterprise in order to protect the health of consumers. No doubt that companies with experience of food safety and quality management system are most in need of switching to HACCP system. Because these companies generally recognize the impotence of this system to facilitate their access to markets, especially foreign ones. As well as the protection of their commercial reputation and the strengthening of consumes demand for their products. In this context, this study aims to clarify the justifications and the importance of the application of the HACCP system in the field of food industries and the consequences of the feasibility of the application of this system at the level of the economic enterprise. In this study, the challenges linked to the application of the HACCP system were presented through concepts and economic principles. Among the main results of this study, it appears that the application of the HACCP system in the food canning company Amor Benamor in the Wilaya of Guelma was positive and of great importance, but the impact of its contribution to the improvement in the company has not at the required level. (Le système de gestion de la qualité HACCP, en particulier le système d'analyse des risques et de maîtrise des points critiques est un système préventif utilisé à l'échelle mondiale qui vise d'assurer la sécurité alimentaire dans une entreprise économique afin de protéger la santé des consommateurs, et il ne fait aucun doute que les entreprises ayant une expérience des systèmes de gestion de la qualité et de la sécurité alimentaire sont les plus nécessité de passer au système HACCP, car ces entreprises reconnaissent généralement l'importance de ce système pour faciliter leur accès aux marchés, notamment étrangers, ainsi que la protection de leur réputation commerciale et le renforcement de la demande de leurs produits par les consommateurs. Dans ce contexte, cette étude vise à clarifier les justifications et l'importance de l'application du système HACCP dans le domaine des industries alimentaires et les conséquences de la faisabilité de l'application de ce système au niveau de l'entreprise économique. Dans cette étude, les enjeux liés à l'application du système HACCP ont été présentés à travers des concepts et des principes économiques. Parmi les principaux résultats de cette étude, il apparaît que l'application du système HACCP dans l'entreprise de conserves alimentaires Amro Benamor de la Wilayat de Guelma a été positive et d'une grande importance, mais l'impact de sa contribution à l'amélioration des performances de l'entreprise n'était pas au niveau requis.)
