الملخص

Les deux souches de Lactobacillus plantarum productrices d'EPS (10 et BCX1) ont été isoléesrespectivement à partir de rumen et du lait de chèvre. L’étude de la production des EPS par cessouches dans des milieux MRS modifiés contenant diverses sources de carbone a été révélé avec(glucose saccharose, maltose, fructose, galactose) à des concentrations de 20 et 40 mg / litre. Lesdeux souches étaient capables de produire les EPS dans chacun des sucres testés. La concentrationde sucre et le temps d’incubation présente un effet marqué sur le rendement en EPS.ces dernierspeuvent modifier les propriétés de la surface de ces deux souches. (The two EPS-producing strains of Lactobacillus plantarum(10 and BCX1) were isolated from rumen and goat milk, respectively. The study of EPS production by these strains in modified MRS media containing various carbon sources was revealed with (glucose sucrose, maltose, fructose, galactose) at concentrations of20 and 40 mg / liter. Both strains were able to produce EPS in each of the sugars tested. The sugar concentration and the incubation time have a marked effect on the yield of EPS.
