Postharvest losses worldwide significantly contribute to food shortages and persistent food insecurity, with continuous loss and waste of food production. Agricultural practices in most Middle Eastern countries, including Oman, face challenges in achieving food security and sustainability due to arid and semi-arid climatic conditions, low productivity, and considerable postharvest losses. Consequently, reducing food loss and waste has garnered substantial attention for its vital role in enhancing productivity, food security, and overall sustainability. Value addition of agricultural products plays a crucial role in improving productivity by reducing waste and increasing profitability. This study aimed to assess the current status of agricultural production and productivity in Oman, identify value addition needs, and quantify technology transfer and capacity-building requirements to enhance productivity through value addition. Additionally, the study explored the potential for adopting value addition-based agritourism in Oman. Four key agricultural products with value addition potential—dates, bananas, tomatoes, and cucumbers—were selected alongside six governorates where these crops are cultivated. Primary data were collected through questionnaires distributed to stakeholders including farmers, value addition industries, relevant ministries, and institutions to evaluate current status, potential for value addition, technology transfer, capacity building, productivity enhancement, and agritourism opportunities. All selected crops are seasonal, and farmers face challenges such as postharvest handling losses, market fluctuations, price variability, and competition with imported products. Value addition extends product shelf life, allowing sales during off-seasons. Data were collected from six prominent date value-addition factories and several tomato processing units, while secondary data were used for banana and cucumber due to the absence of dedicated processing factories in Oman. The value-added products studied included date products with nuts, syrup, and paste (Khalas and Fardh varieties); banana chips, paste, and juice; tomato ketchup, paste, and juice; and cucumber pickles, paste, and juice. Four mechanization levels were classified for each value addition process. Productivity ratios were calculated to quantify productivity improvements relative to raw product values. Protocols comprising 36 guideline sheets (nine per crop), each featuring 13 key criteria—including mechanization, investment, technology transfer, capacity building, productivity potential, and net profit—were developed to assist farmers, extension officers, planners, and stakeholders. Potential agritourism sites, activities, and value-added products were identified, and a SWOT analysis covering productivity improvement, value addition, technology transfer, capacity building, and agritourism was conducted. Findings revealed several obstacles to promoting value addition in Oman. Large-sized landholdings (2–10 ha or more) among small and medium enterprises (SMEs) are scarce. Only 4% of date and tomato farms, and 2% of banana farms had participated in technology transfer or capacity building, while cucumber farms had none. These activities remain in early stages and require increased investment and effort. Productivity improvements via value addition were substantial, with dates (dates with nuts) showing 540% and 360% increases (Khalas and Fardh, respectively), banana chips at 854%, tomato ketchup at 600%, and cucumber paste at 650%. Agritourism was practiced by a small percentage of farms: 3% of date farms, 7% of banana farms, 8% of tomato farms, and none of the cucumber farms. Potential agritourism destinations and income generation opportunities were identified. The SWOT analysis highlighted a critical weakness: the lack of SME farms with sufficiently large landholdings to support value addition industries. Technology transfer and capacity building are underdeveloped due to inadequate support programs, financial constraints, and limited collaboration between public and private sectors. Value addition offers significant potential to improve land, water, and labor productivity under Oman’s arid conditions. When integrated with agritourism, it can enhance farm incomes and benefit both sectors. Initiatives to raise awareness among farmers and tourists and to develop farm visit activities are needed. The developed guideline protocols provide valuable decision-support tools to improve product quality, farm income, productivity, job creation, and agricultural sustainability. These recommendations align closely with Oman’s Vision 2040 holistic development plan.
