- The modern world has realized the importance of natural products such as fruit products, jams that arepart of the latter are known for their excellent energy supply products and their beneficial effects to thehealth . This study aims to estimate rates of antioxidants (total phenolics, flavonoids, flavonols, ortho-diphenols, proanthocyanidins and vitamin C) for different varieties of jams; blackberries, figs, apricotsand strawberries. In addition to the evaluation of the antioxidant activity by measuring the reducingpower by reducing FeCl3 and molybdate and the extent of the anti-radical activity via theneutralization of DPPH and ABTS. The contents of the various selections from jams are includedbetween 48.13 and 193.59 mg g EAG/100 for phenolic compounds, 0.96 and 2.48 mg EQ / 100 gflavonoids, 0.15 and 2.50 EQ mg / 100 g for flavonols, 60 and 152.28 mg g EAG/100 for ortho-diphenols, 1.55 to 6.08 g EC/100 for proanthocyanidins and 232.09 and 571.84 mg/100 g for Vit C.the results indicate that the variety of jams FR2 (Sabri) and M2 (Tunas) have the highestconcentrations of polyphenols, flavonoids and orthodiphenols and they Have more activity in theDPPH, ABTS and higher reducing power. The higher rate of ascorbic acid (Vit C) is attributed to jamFR1 (Sicam) and M1 (Eva), by consequence they have largest activity in the phosphomolybdate. Inaddition, there is a very highly significant correlation between phenolic compounds varieties of jamsand reducing power and anti-radical activity using the DPPH with coefficients of 0.90 and 0.94,respectively. Thus between two methods of measuring antioxidant activity, antiagainst DPPH radicaland reducing power with a correlation coefficient of 0.83 activity. Other highly significant correlationswere also found between phenolic compounds and ortho-diphenols and between flavonoids andflavonols with coefficients of 0.86 and 0.80, respectively.
