Proximate Analysis, Phytochemical Screening and Thin Layer Chromatography of Two types of Pepper (Capsicum annuum L.)

الملخص
Hot pepper (Capsicum spp.), commonly known as chili, belongs to the family Solanaceae. It is the world’s third most important vegetable after potatoes and tomatoes in terms of quantity of production. The objective of this study was to run proximate analysis, phytochemical screening and thin layer chromatography (TLC) tests for two types of chili pepper; the normal (T1) and the hot Gabaneet; ( T2). The Pepper samples were bought from Wad Medani local market and were cleaned manually, kept under room temperature for 24 hours, grouned with an electrical blender, and then subjected to the proximate analyses (ash, protein, fiber and fat contents), phytochemical screening (for the main classes) and TLC test (for the active ingredients). The results of this study showed that, in both chilli’s powder (T1 and T2), alkaloid, flovonoids and flavonones were detected in their fruits, while tannins, glycosides, sterols and triterpens, saponins were not detected. Also, there was a relative high concentration of alkaloids class in T2 compared to T1. The ash, protein, fiber and oil contents in T1 were 7.3%, 13%, 6.4% and 16.3%, respectively, while those of the T2 were 6.3%, 12%, 4.6% and 12%, following the same order. The difference between the two types was not significant; i.e the two chilli’s fruits possessed relatively similar quantities of nutritional contents. It was also observed that, T1 sample had a sum of 57% of moisture and carbohydrates, whereas, T2 has 65.1% (more than that of T1). The TLC tests for the polar (water and ethanol) and apolar (hexane) extracts of fruit detected one spot for each type per each extract, but with different Rf values. The recommendations of this study were to run proper chemical and phyochemical tests, antimicrobial and pharmaceutical activity tests, and also to run advanced phytochemical and amino acids profile tests.
