Thyme (Thymus vulgaris) is one of the well-known medicinal plants, and extractsfrom this plant contain a variety of compounds that have been attributed to various biologicalactivities. In this study, we attempted to evaluate the antioxidant activity and phytochemicalcomposition of a variety of extracts prepared from Thymus vulgaris leaves (Crude extract,EDCM,,EEP,HA).According to the HPLC analysis, our results show that the crude extract is the richestin thymol and carvacrol, which is why we chose it as the active ingredient for microencapsulation. The objective of this work is to study the influence of the physiological intestinal medium (pH=6.8) on the in vitro release kinetics of the encapsulated active ingredient "thymol"using two biodegradable polymers (PEG/Dextrin). We performed the encapsulation of theactive ingredient "thymol" using the double emulsion process, optimizing several factors(dose, pH, RP) through factorial experimental design modeling to obtain a maximum rate ofencapsulation in polyphenols and flavonoids. To achieve this, we used the MINITAB software to study the variance in order to determine the most significant factor and its influenceon the encapsulation rate of polyphenols and flavonoids.
