Determination of Sodium, Potassium, Calcium and Vitamin C in Different Types of Orange in Sudan

الملخص

Orange is one of the most important sources of food for human health. It lowers blood pressure level and cholesterol, it reduces the risk of developing cancer of breast, colon, rectum, lung and mouth. It helps in formation of bone and tissue repair and prevention of cold. Orange trees grow in clay as well as in very sandy soils in Gezira, Kassla State and in northern state etc. It contains elements like sodium, potassium and calcium, and compounds like vitamin C, which chemically is 6 carbon ring, with diol grouping at carbon 2 and 3. The objective of this study is to determine vitamin’ C, calcium, potassium and sodium in different types of orange from different places. Vitamin C and calcium were determined by titration method. Excess Iodine was added to the sample to react with vitamin C, then the remaining iodine was titrated by standard thiosulphate solution. The sample was titrated against EDTA solution with meroxide as indicator, from the titrant calcium concentration was calculated. Sodium and potassium were determine by flame photometer. The results of this study indicated that average of vitamin C in Gezira, Kassala and Northern State in peel is 2694 and 3784 mg/L in Senari and Nori types respectively. Concentration in juice is 24873 and 21435 mg/L in Nori and Senari types respectively. The average of calcium in the three states in peel is 573 and 787 mg/L in Senari and Nori types respectively. Concentration in juice is 640 and 760 mg/L in Senari and Nori types respectively. The averaged of Potassium in peel is 19 and 25.3 mg/L in Senari and Nori types respectively. Concentration in juice is 24 and 26 mg/L in Senari and Nori types respectively. Sodium Concentration in peel is 36 and 40 mg/L in Senari and Nori types respectively. Concentration in juice is 42 and 34.66 mg/L in Senari and Nori types respectively. There are many differences in this past studies in vitamin C, calcium, potassium and sodium concentration, that may be due to storage and ripening phases and soil composition. The study recommends the analysis of soil in these places to correlate the results with concentration of elements in the fruit.
